Growing Season: Cool spring with adverse conditions for fruit set produced a small crop.
Winemaking: Grapes were picked early in the morning to ensure they were cool at the time of crushing. Sulfur dioxide was added at the crusher to prevent oxidation and preserve the varieties fresh character. The juice was cold settled for 48 hours and the clear juice was inoculated with a yeast strain selected to emphasise the varietal aroma of Sauvignon Blanc. After fermentation the wine was quickly cleaned up, filtered and bottled to achieve maximum retention of varietal character.
Colour: Pale straw.
Nose: Generous tropical fruit is complemented by just a hint of fresh cut grass.
