Grape Varieties: 100% Chardonnay Maturation: One third in stainless steel on yeast lees and two thirds of the wine in new French oak on yeast lees with stirring. Alcohol: 13.8% alc/vol Cellaring Potential: Three to five years. Growing Season: 2010 was a relatively warm dry year giving fully ripe fruit. Careful hand positioning of shoots ensured that the grapes were shaded from the sun helping to retain maximum varietal character. Winemaking: The crushed grapes were drained and pressed to stainless steel tanks without sulphur dioxide addition. The juice was partially cold settled. Juice still containing some light solids was used for fermentation. The juice was allowed to start fermentation via the 'wild yeast' naturally present on the grape skins. Subsequent inoculation with a selected pine strain was used to ensure completion of fermentation. Two thirds of the volume was fermented in new French oak baniques, a third in stainless steel. The new wine was then matured on yeast lees for six months prior to blending and bottling. Colour: Pale Straw. Nose: Complex aromas of peach and lime derived from the vat. as well as barrel fermentation and yeast derived characters. Palate: Rich and full bodied with creamy mid palate and long finish. |
